Why all the fuss about MSG? Monosodium glutamate is an amino acid (with the mineral sodium attached to it), manufactured chemically and used as a flavor enhancer. A flavor enhancer makes your brain chemistry think the food tastes different than it does; MSG gives the perception of other flavors in food. Glutamate is glutamic acid found in abundance in both plant and animal protein. Glutamic acid is a non-essential amino acid which means the body is capable of producing its own glutamic acid and does not depend upon ingested food that contains the amino acid. Glutamic acid serves as a neurotransmitter, vital to the transmission of nerve impulses in many parts of the central nervous system. Sounds good so far, so why all the fuss? Under certain circumstances, glutamic acid becomes a neurotoxin, causing neuron degeneration and cell death.

When glutamic acid is “created” it changes its form and becomes totally different from the unadulterated, unprocessed and unfermented glutamic acid produced by the body. The glutamic acid formed in the body is called L-glutamic. So herein lies the problem–in manufacturing, glutamic acid is produced through carcinogenic and toxic methods. When people ingest amounts that exceed their individual tolerance levels, they experience many unpleasant side effects. MSG fed to the very young has shown to cause brain damage and therefore learning, behavioral and endocrine disorders as well as rapid, fluttering heartbeats.

This is the thing… I’m writing this article because I want you to have a blessed New Year. Becoming knowledgeable about what you put in your body could mean a matter of life or death! Our bodies break down for various reasons, and sometimes the symptoms are not noticeable until we get pain or weakness. The liver has a very hard time breaking down or eliminating any toxic substance and as a result will get stored in our fat cells to help protect us from endangering our other organs. But this can cause havoc when done on a daily basis! And with MSG, there is no exception. The shame of the whole thing is that the government allows this in our foods. The Food and Drug Administration (FDA) considers MSG a “Generally Recognized as Safe” (GRAS) chemical. This chemical is not safe for anyone! It is in all kinds of convenient foods and in restaurant foods. Tragically, we are not able to get a chance to see what’s actually being served to us in restaurants. You might think it’s a delicious, healthy dinner only to find they use MSG to enhance the flavor. You can Google “what restaurants use MSG in their food?” You might be very surprised! In 1995 the FDA considered MSG safe, but for the past 24 years nothing has been considered about the reported effects of MSG causing fearful confusion, chest pain, pressure on the head, seizures, headache, nausea, burning sensations or tightening in the face! Since 1998 MSG is not required to be included in the ingredient list as a spice or flavoring. However, because of the lack of FDA regulations, MSG can be labeled as “natural” flavorings. The government is not our doctor, and we should be listening to our bodies. Food should not make us feel sick or weak!

Our voices might not be loud enough to stop manufacturers from putting chemicals in our food or to stop them from calling this chemical “natural.” However, we can start speaking out by knowing the disguised names of MSG:

~ hydrolyzed vegetable protein

~ hydrolyzed yeast or anything that says yeast (yeast extract and yeast nutrient!)

~ glutamic acid

~ monopotassium glutamate or anything glutamate!

~ textured protein

~ soy extract

~ calcium caseinate

~ sodium caseinate

Once you recognize the enormous amount of MSG and other chemicals in your food, you’ll want to tell others about it. A quote from William H. Johnsen, “If it is to be, it is up to me.” Passing the word along to loved ones can be a huge step to help stop this offensive deception! Looking at every ingredient list as you shop can be time consuming, so I suggest you start with the food in your pantry and freezer.
